Crust:
170 grams ground almond flour
3/4 cup sugar
A pinch of salt
1 egg
2 egg whites
Filling:
6 eggs
2 cups sugar
3 tablespoons potato flour (or gluten-free flour blend)
Juice of two large lemons
Preparation:
Preheat the oven to 200 degrees Celsius (slightly less than 400 degrees Fahrenheit)
In a bowl, mix the almond flour, 3/4 cup sugar, 1 egg, egg whites and salt. Spread evenly into a rectangular 9 x 13 pan.
Bake for 25 minutes or until the top is dry to the touch. Remove from oven and let cool.
In a bowl, mix 6 eggs, 2 cups sugar, potato flour and lemon juice until the batter is soft and uniform. Pour on the prepared base and return to the oven.
Bake for 30 minutes, until the center is no longer liquid. Refrigerate slightly, cut, and enjoy!
