Ingredients:
One kilo grated and drained yam or sweet potato (with orange flesh)
One medium chopped onion
Two eggs, beaten
¼ cup whole wheat flour (or hummus flour for a gluten-free option)
¼ tsp baking powder
½ tsp salt
½ tsp ground cinnamon
¼ tsp ground nutmeg
Preparation:
Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
Prepare two baking trays covered with greased baking paper.
Mix all the ingredients together in a large bowl. Pour ¼ cup sized patties onto the baking trays.
Bake for 25 minutes. Turn the patties over and bake for an additional 10 minutes.
Serving suggestion: add sour cream, apple sauce or jam.
